HOW TO MAKE SOUTHERN YAM DESSERT SQUARES

INGREDIENTS

  • 1 pounded yam or 16-18 ounces of canned sweet potatoes; all drained and mashed into fine particles.
  • 1 ½ cups of unsifted flour
  • ½ teaspoon of salt
  • 2 cups of quick-cooking oats
  • 1 teaspoon of vanilla extract
  • 2 eggs, beaten
  • 1 cup of softened butter
  • ½ teaspoon of baking soda
  • 1 teaspoon of ground cinnamon
  • 1 cup of firmly packed light brown sugar
  • 1 (14 ounce) can of sweetened condensed milk
  • 1 teaspoon of grated orange rind
  • ½ cup of chopped pecans
  • ½ teaspoon of ground allspice

                             PREPARATIONS

  • Preheat your oven to 350°C.
  • Pour in your oats, baking soda, flour, and salt and set aside.
  • In a large mixing bowl, beat your butter, sugar, and vanilla until it becomes fluffy.
  • Add, the dry ingredients and mix until the mixture looks like coarse crumbs.
  • Scoop out 1 cup of crumb mixture for reserve and press the remaining firmly on the bottom of a 13 x 9-inch baking dish.
  • Bake for 10 minutes.
  • Pour in the remaining ingredients (except nuts) in a large bowl while the crust is baking and mix until an even mixture is achieved.
  • Pour the mixture over the prepared crust.
  • Add the nuts that weren’t mixed to the reserved crumb mixture earlier scooped out and sprinkle evenly over the top of the crust.
  • Bake for another 25 to 30 minutes or until it turns golden.

There, you have your Southern Yam Dessert squares ready to be served either warm or cold and with vanilla ice cream or whipped cream. Bet it wasn’t so difficult to make after all.
