Yam and fish stew is an indigenous dish of the African man especially, the Nigerians. It is mostly eaten in the eastern and western parts of the country where it’s prepared and eaten at every possible instance. Ingredients

  • 1 big yam
  • Fresh puree tomatoes
  • Fresh fish ( which can be fried or boiled)
  • Sachet tomatoes
  • Fresh pepper (ground alongside puree with some sliced onions)
  • 2 or 3 medium sized onion (sliced)
  • Curry leaves (optional)
  • Groundnut oil
  • Salt and other seasonings

     Preparation

  • Peel and wash your yam, arrange in a pot with a cup of water, add a pinch of salt and allow to boil for about 20 to 25minutes.
  • Bring the cooked yam down when it is soft enough to be eaten and sieve the water from the yam.
  • In a separate pot, heat your groundnut oil which should contain oil used in frying your fish, add sliced onion and fry for two minutes.
  • Add your mixture of tomato puree with pepper and onion and the sachet tomato paste.
  • Fry for another 10 minutes to make sure the stew doesn’t taste like a mixture of raw fresh and sachet tomatoes.
  • Add salt and seasonings to taste and a little water or the sauce from your seasoned boiled fish. Stir the mixture and allow to simmer for about 10 minutes.
  • Pour in your fried fish or the cooked fish alongside your chopped curry leaves if you decide to go for it and allow your stew to boil.
  • Ensure to serve while hot.
